Bramble (serves 2)

Simple to make with blackberries foraged from your local hedgerows.

You will need:

  • Cocktail shaker
  • Sieve or Strainer
  • Ice
  • 2 short glass tumblers
  • 40ml Lemon juice
  • 60ml Sugar syrup (for homemade sugar syrup see recipe at the end of the cocktail recipes)
  • 100ml of Foxtail Gin

 

For the blackberry Syrup

  • 125g Fresh or frozen Blackberries
  • 25g Sugar
  • 1 tbs Lemon juice (Or you can use ready-made Crème de Mure syrup)

 

Method:

To make the syrup heat the blackberries, 25g sugar, 30ml water and 1 tbs of lemon juice in a saucepan over medium heat. Gently simmer for 5-10 minutes crushing the blackberries with the back of a spoon to release all the natural juices. Once the syrup has thickened remove from the heat. Allow to cool slightly then pour the blackberry mixture into a sieve over a bowl to catch the syrup. Gently press the blackberry puree through the sieve leaving the blackberry solids in the sieve and catching all the lovely juices in a bowl underneath.

 

You don’t need to waste the puree, have this on a bowl of porridge for your breakfast!

 

Next, pour the Gin, 40ml Lemon Juice and 60ml sugar syrup into your shaker, half-fill with ice, and shake until ice cold.

 

Two thirds fill your chosen short glass tumblers with crushed ice.

 

Strain the contents of your shaker into the tumblers equally.

 

Drizzle the homemade blackberry syrup over the top of each glass so it trickles through the ice.

 

Garnish with fresh blackberries.
