Elderflower & Herb Cooler (serves 2)

Using petals & herbs from your garden this elegant cocktail adds a little sparkle to spring.

You will need:

  • Ice
  • 2 tall glasses or champagne flutes
  • 1 sprig of Thyme
  • 1 sprig of rosemary
  • 4-6 edible flowers petals such as pansies, rose, borage etc
  • 75ml Elderflower cordiala
  • 100ml Gin
  • Soda Water

 

Method:

Pop the herbs and flowers into the wholes of an ice cube tray, fill with water and freeze for 2-3 hrs or until frozen solid.

Pour the elderflower cordial, gin and a handful of ice cubes into a jug. Stir until the outside of the jug feels cold then strain into 2 tall glasses or champagne flutes. Top up with the soda and add a few more ice cubes and the floral ones too.
